Across Mexico and Central America, maize is the most important staple food. There are over 100 different ways that maize can be prepared, and tamales is one of the most popular traditional dishes of Mexico.

Nixtamal is an ancestral cooking technique that has been passed throughout generations and that has allowed an entire civilization to live of corn.

In this workshop you will learn how to make tamales and explore the difference between conventional tamales (the ones made with corn flour) and traditional tamales (the ones made with nixtamal corn). You will have the opportunity to make salsas and fillings for the tamales, to taste and to take home.
