December Highlights at the Farmers Market

The holiday season is upon us, and we’re excited to continue the Saturday Farmers Market during our Winter Village celebrations.

Evergreen's Winter Village is your destination to play, shop and eat! With all your holiday meals coming up, the Farmers Market is the perfect place to fill up your pantry with real, good food for family and friends. Every week in December we're featuring a fun recipe for you to create a delectable, Instagram-worthy spread with goodies you can find at the market.

From all of us here at Evergreen, we wish you and your families a lovely holiday season, and thank you for being a part of our market community! In the new year, look forward to seeing updates on the various activities that some of our absent farmers are up to in the winter months.

December 2 | Welcome, Winter Village!

Today is the first day of Evergreen's Winter Village! Along with the amazing produce, preserves, prepared food and other goodies you can buy at the Farmers Market, don’t forget to head outdoors and say “hello” to the folks outside in the Pavilions, or pick up a s’mores kit (by the amazing Evelyn’s Crackers and Chocosol Traders) to roast over the fire!

We’ve also got an exciting update from Angelo at Country Meadows! After a busy fall pilgrimage to Greece, they are busy pressing olives from their ancestral olive grove to make the delicious extra virgin olive oil you have all come to know and love.

They will be back at the Farmers Market later this month, just in time for your holiday dinners. Don’t forget to stop by and welcome Angelo back when you pick up a fresh bottle of extra virgin olive oil!

Once you have your fresh olive oil, try making this easy and amazing apple cider vinegar dressing with it! If you’re feeling adventurous, try it with a sweet mustard from Kozlik’s Mustard instead of Dijon mustard. Family owned and operated, Kozlik’s Mustard uses 100% Canadian mustard seeds in their mustards!


Apple Cider Vinegar Dressing

Ingredients

  • 1/4 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon garlic, minced
  • 1 teaspoon sea salt and more if needed
  • 1/2 teaspoon freshly ground black pepper and more if needed

Directions

  1. Add all ingredients to a blender until combined, or combine ingredients by shaking vigorously in a mason jar.

December 9 | Cabbage

It may not sound exotic, but if you’re trying to stay seasonal, cabbage is a fantastic vegetable to eat during the winter months. Part of the Cruciferae family, cabbage is a great source of vitamin C and fibre. Drop by Joyfully Organic or Grassroots Organic to pick up some cabbage. Look for firm and heavy heads with crisp leaves that are tightly packed.

Cabbages are all around the Saturday Farmers Market this season! For a fun and waste-free alternative to dishware, visit TC’s Tibetan Momos and be inspired by their edible cabbage leaf bowls. If you’ve ever tried a lettuce wrap and got frustrated by how easily they crack, you won’t be disappointed with the crisp cabbage leaf as an alternative.  

Another tasty way to prepare this vegetable? You might be used to the more traditional way of cooking cabbage (boiling), but roasting is a great alternative. Try this easy recipe that brings out the best flavours of cabbage.


Roasted Cabbage Slices

Serves 6
Season: Winter

Ingredients

  • 1 medium head of green cabbage
  • Coarse salt and pepper
  • 3 tablespoons of olive oil, separated
  • 1 teaspoon caraway or fennel seeds

Directions

  1. Preheat oven to 400°F
  2. Brush a baking sheet with 1 tablespoon of olive oil
  3. Slice cabbage into rounds about an inch thick. Cut from the top to the base to maintain cabbage structure
  4. Place cut rounds on baking sheet in a single layer and brush the top with olive oil
  5. Season with coarse salt, ground pepper, and 1 teaspoon of caraway or fennel seeds
  6. Cover or tent and place in oven to bake for 20 minutes
  7. Remove cover, flip rounds and season second side
  8. Bake for another 15-20 minutes until golden brown on the edges and centre is tender
  9. Remove and serve

December 16 | Lamb

If you’re looking for happy, healthy sheep, you’ll find them in abundance at Buschbeck Farms. Located in central Grey County, Buschbeck Farms is a family farm that produces pasture-raised and grass-fed lamb and beef.

Their sheep are Romney Sheep, a breed considered by many to have the best texture. Sustainably and ethically raised, hormone & antibiotic free, you can rest assured that you are buying some of the best lamb in town!

For this week’s recipe, it’s time to pick up that bottle of extra virgin olive oil for this delicious lamb chop sizzled with garlic. When you purchase excellent meats, you really don’t need a lot to bring out the best flavours – and when you shop at our Saturday Farmers Market, you know you’re buying the good stuff.    


Lamb Chops Sizzled with Garlic

Serves 4

Ingredients

  • Eight 1/2-inch-thick lamb loin chops (roughly 2 pounds), fatty tips trimmed if desired
  • 10 small garlic cloves, halved
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 2 tablespoons minced parsley
  • Sea salt and freshly ground pepper
  • Pinch of dried thyme
  • Pinch of crushed red pepper

Directions

  1. Season lamb with sea salt and pepper, sprinkle lightly with thyme
  2. Heat olive oil on a skillet under moderate-high heat until shimmering
  3. Place lamb chops on skillet along with garlic
  4. Cook for 3 minutes, or until the bottoms are brown
  5. Flip lamb chops and garlic and cook for another 1-2 minutes, until brown
  6. Transfer lamb chops to plates
  7. Add water, lemon juice, parsley and crushed red pepper to the skillet with the garlic and cook for 1 minute, or until sizzling
  8. Pour garlic and sauce over lamb chops and serve

December 23 | A Feast Fit for Farmers

The holidays are a busy period for all, so to ensure that you have the energy to tackle all that socializing fuel up at our Saturday Farmers Market!

Whether you’re preparing a feast for your family at home, bringing a dish to a potluck dinner, or lucky enough to be invited to a meal with no obligation to cook, you’ll be sure to find something scrumptious at the market. After all, there is no better way to show your loved ones how much you care than to feed them the best food – and what better than food that comes straight from our farmers and food artisans?

Our recipe this week for a fulsome, fantastic feast. A delicious dinner should have a great beginning, a satisfying main course, and a memorable end – here are some ideas for a fantastic holiday spread!

Appetizer

Create a smashing charcuterie and cheese board with:

December 30 | Preparing for the New Year

Get ready to toast in the new year by visiting one of our rotating wineries.

Stop by Flat Rock Cellars for a bottle to celebrate your midnight toast at home, or as a practical host gift if you’re heading out! Founded in 1999, this Niagara winery uses low impact viticulture strategies to manage their vineyards, with reduced-energy management technology to maintain a smaller environmental footprint. From hand-picked and sorted grapes to the gravity-flow design during the wine-making process, Flat Rock Cellars is creating award-winning wine without sacrificing environmental stewardship. With an assortment of reds, whites, sparkling and rosés, you’ll be sure to find something that satisfies your palette.

For the experimental toasters, try this fun cocktail to ring in 2018! If you’re lucky, Flat Rock Cellars will have a bottle of 2011 Patrick Chan Sparkling on hand so you can turn off the lights and turn on the fireworks with a fun bellini in hand!

Tomorrow is also the last day of Winter Village! Make sure to come to shop, eat and have fun – it’s the last call for street curling for the year, so come finish 2017 with a rock in hand!


Sparkling Wine Raspberry Bellini

Serves 8

Ingredients

  • 1 bottle sparkling wine
  • 8 scoops raspberry sorbet
  • 8 teaspoons raspberries

Directions

  1. Scoop raspberry sorbet into glass
  2. Pour sparkling wine over sorbet
  3. Add 1 teaspoon of raspberries on top to garnish
  4. Refill as necessary!
